We’re now into full summer (though you may have missed that with all the rain…). What does that mean for our latest menus?
Even with the dismal weather, we’re still seeking out lighter summer tastes. Both our restaurants are bringing fish to the fore, along with mouth-watering summer fruits and vegetables.
At Centotre, we can’t resist seeking some of that Italian sunshine in fruit and veg form. So there’s Campanian peaches, new season San Marzano tomatoes (in starters and alongside meats), and cherries forming the basis for our cocktail of the month.
Italian peppers and courgettes take centre stage in our special seasonal dishes. We’re also finding ways to combine the best of both worlds, with terrific Scottish chanterelle mushrooms combined with Italian ricotta in our ravioli.
Our favoured fish option is clams – look out for them in our Spaghettini Vongole. And try out one of our special ingredients for this month: Scottish surf clams. With a sweet, delicate flavour, suiting steamed dishes, they’re a treat – on both sides of the Atlantic.
At the Scottish Cafe & Restaurant, we’re celebrating Scottish strawberries, featured in desserts and also as part of our starters. Look out for salmon, mackerel and sea trout, served along with the sweetest of summer vegetables like courgettes and peas.
We’ve also got our own artisanal cheese to celebrate: Lanark White, a hard cheese matured for 6 months. Hand-made by Errington’s, and a sister product to their famous Lanark Blue, this is a cheese worth shouting about – whether as a cheese board item or as part of a starter.
